Just as Cabernet Sauvignon is for reds, we consider Chardonnay to be for whites—two varieties that seem highly recognizable at first glance, yet not entirely so. For us, they are expressions of the wine philosophy behind them, of individualism, and of what the winemaker wants to portray.

We have chosen to work within a more neutral aromatic style for whites in order to demonstrate our vision of a fresher, less traditional—even slightly wild—Chardonnay.

Our approach in the 2025 vintage focused on determining the optimal harvest date to ensure sufficient natural acidity, while also allowing the varietal aromatic profile to fully express itself. Fermentation of half the batch took place in amphorae, while the other half was fermented in Bulgarian acacia. To build body and mid-palate harmony, the wine was aged on its lees for five months.

The color is translucent, pale straw with greenish hues and low intensity. The nose reveals Granny Smith apple, pear, and lime, with a mineral finish. The palate is juicy and crisp— like “summer in a bottle,” evoking the feeling of a seaside morning breeze, as well as notes of green apple and lime. It finishes with impressive length and a mineral aftertaste.

Chardonnay Barrique 2025 is made entirely from free-run juice, with no fining, stabilisation, or filtration.
