We’ve long wanted to craft a wine from Pamid, driven by the desire to showcase a traditional yet powerful expression of this indigenous grape variety.

Although Pamid is known for its low levels of phenolic compounds, tannins, and extraction, we believe it can produce a wine with distinct character while preserving its delicate aromatic profile. Our goal was to vinify it in a way that brings length, density, volume, and a lingering finish.

To achieve this profile, we employed several winemaking techniques:

  • harvesting at a point when the stems were fully lignified

  • cold pre-fermentation maceration of whole bunches

  • open-vat alcoholic fermentation

  • post-fermentation maceration of a portion of the wine with Cabernet Sauvignon skins

  • partial aging in old Bulgarian oak barrels

  • 100% free-run juice — no pressing

  • unclarified, unfiltered, and unstabilized

The color is translucent, in the raspberry-red spectrum. The aroma reveals notes of morello cherry, raspberry, cherry, and strawberry, interwoven with rustic undertones. The taste is fresh yet harmonious, with an unusually long finish for the variety
