About the wine

We have a dream of creating several interpretations of sparkling wines from Bulgarian grape varieties. Being based in the village of Karabunar, one of our first choices was Pamid—the grape that has become the emblem of our winery.
We decided to broaden our perspective on it, bringing to life our philosophy of exploring different interpretations and facets of the same grape varieties, and thus creating our first sparkling Pamid.
The idea for this wine began with our dream of crafting high-quality sparkling wines using the traditional method. We therefore sought to come as close as possible to that style, even within the framework of a pét-nat. This is why we accepted nearly 40% production losses and bottled the wine at a pressure of 2.9 bar
On the nose, you’ll find raspberries, strawberries, light reductive notes, brioche, and lychee. The palate is fruity, full-bodied, and long.
As with all of our wines, we continue to follow our philosophy of “non-brand identity,” transforming each label into a canvas for creative collaboration with our long-time friend and partner, Mihaela. The design of the Pamid Pét-Nat is the meeting point of our vision, our shared inspiration, and her artistic perspective. It weaves together bubbles, sparks, stars, movement, and reflections—evoking both the fermenting must and the lively bubbles dancing through this pink symphony of aromas—with a playful nod to the explosive nature of the processes that brought this wine to life.
